My mother has done variations of this treat over the years, ranging from beaten Jell-o and frozen Cool-Whip and layers
of canned fruit (pinching penny time) , or old-fashioned puddings made with cream and layers
made with sprinkles added, or the very elegant heavy cream and fruit
bars.
To make it fancy, she used to layer them in fancy parfait glasses(she had exactly five one for each of us) and freeze them, as a special family dessert. Presentation was everything, especially when pinching pennies(which she was a master at), but she also made it fun for us kids to do on hot days, hence the fun cups and sticks.
Feel free to experiment(just remember that certain fruits do not go with Jell-o...I goofed doing that one!).
Take cream, sweetener, and frozen fruit, and blend until desired consistency.
Spoon into cups until filled almost full, then cover with parchment
paper squares that have a slit cut into center(holds better than Saran
Wrap, but that will do as well) and add popsicle sticks.
Freeze
until firm, about two hours, more if using fresh fruit. I like using
frozen fruit(I've even frozen fresh fruits in a tupperware bowl),
because it's a bit thicker, and lessens the time between freeze and eat!
I like to separate some of the fruit, blend the rest until creamy, and
then alternate them or make two different fruits, and make a parfait. I also like to take any leftover of the mix and spoon it into shortcake cups...kind of an ice cream and cake treat!
